3 lb. Sirloin Roast

2 cups water

1/4 cup pepperoncini juice

1 TBSP Fresh cracked black pepper

2 TBSP Cavenders seasoning

Monterey Jack Cheese, sliced

1 large onion

1/4 cup beef broth

1 Bell Pepper (green, red, yellow work great), chopped

French Bread

Buy it or get recipe here

Beer Cheese (Optional Add-on)

Meat Directions:

In an Instant Pot (You get the most tender meat in here! )

Place the sirloin roast in 2 cups of water. Add 1/4 cup pepperoncini juice, 2 TBSP Cavenders Seasoning and use the Roast/Stew buttom (90 minutes)

After 90 minutes, remove meat. It will fall apart. Just shred it up and fluff it. Set Aside.

Onion Directions:

Slice a very large onion.

In a saute pan, drizzle about 2 TBSP Olive oil. Heat oil and then add onions. Cook them about 5 minutes. Add beef broth and cook it until the broth reduces and onions are translucent. Add chopped peppers and cook about 5 more minutes. Drain any excess liquid and pour onion/pepper mixture into a small dish and set aside.

Sandwich Assembly Directions:

Preheat oven to 450°

Cut open a loaf of french bread.

Baste the inside of each half with butter. Bake (buttered side up) for 5 minutes, until golden and toasty. Place sliced monterey jack or pepper jack cheese across the bottom and top pieces. Place them on a baking sheet and bake for an additional 5 minutes.

Cover the bottom portion of the toasted, cheesy french loaf with shredded meat. Top with onion/pepper mixture. (If you want beer cheese on the sandwich, add a nice drizzle on top of the onion/peppers) Place cheesy, toasty bun on top.

Place the entire sandwich on a parchment lined baking sheet and bake for about 3-5 minutes. Remove from oven. Let cool about 2 minutes. Cut into portions and serve.

SO DELICIOUS!
