Gyro Kabobs

Oh my gosh! Its like a Greek Fajita! Make your own "gyro" with your own skewered steak! Meat Marinade Ingredients:

1/2 cup olive oil

1/2 cup water

2 TBSP Cavenders Seasoning

1 tsp marjorum

4 cloves garlic, minced

2 tsp Thyme

2 TBSP Cumin

2 tsp Rosemary

2 tsp oregano

2 tsp salt

2 tsp fresh cracked pepper

4 small sirloin steaks or 1 small london broil, or other beef, slice into thin strips

Suggested Sides:

Fresh, soft pitas, or Fresh Tortilla Land Tortillas, cooked on a griddle, served warm.

Shredded Lettuce

Tzatziki Sauce (see recipe BELOW!)

Feta Cheese, Crumbled

Red onion, sliced


Tzatziki Sauce Ingredients:


16 oz Full Fat Greek unflavored yogurt

1 small cucumber, with peel on (or 1/2 large cucumber)

1 tsp vinegar

2 TBSP fresh chopped dill

1 tsp salt

3 cloved fresh garlic, minced

2 TBSP Olive oil

Tzatziki Sauce Directions:

Grate cucumber and place in a strainer or cheesecloth. Strain COMPLETELY until it is no longer drenched. Press hard on it until most of the liquid is drained. In a large bowl, add yogurt, shredded cucumber, minced garlic, vinegar, olive oil and salt. Stir completely. Add dill and stir completely. Cover and refrigerate until ready to serve.


Marinade Directions:

Mix 1/2 cup olive oil, 1/2 cup water, 2 TBSP Cavenders Seasoning, 1 tsp marjorum, 4 cloves garlic, minced , 2 tsp Thyme, 2 TBSP Cumin, 2 tsp Rosemary, 2 tsp oregano, 2 tsp salt, and 2 tsp fresh cracked pepper into a bowl. STIR UNTIL MIXED.


Slice the beef into long, thin strips, place in marinade and gently stir until meat is all completely coated. Cover and set in refrigerator for at least 1 hour, but its better after 4 or more hours.


Assembly Directions:

After meat is marinated, remove from refrigerator. Take one strip at a time and weave in and out of the meat onto the skewer, smashing it closely together. Repeat until skewer is full. Place skewer on plate and make another skewer. When all skewers are on a plate, season them with some Cavenders Greek Seasoning. Makes 4-6 Skewers of tightly woven meat.


Heat Grill until very hot. Place skewers on the grill and turn every minute or so until all sides have grill lines and meat is heated to 140° F. Remove from grill

serve hot. Place all sides on the table and let everyone make their own pita/tortilla.
