Chicken Lo mein

Marinade Ingredients

3 TBSP Teriyaki sauce (We use Kikkoman)

2 TBSP Sugar

1/4 tsp Salt

2 TBSP Siracha Oil

3 cloves Garlic, minced


LoMein Ingredients:

1 boneless, skinless chicken breast, sliced into thin strips

1 package Linguine Pasta (You can use any long noodle, We think Linguine is best for this, though! )

1 bunch green onions

1 cup broccoli, cut small

1 small carrot, peeled , cut at bias and sliced thin (I slice with potato peeler

4 cloves garlic

1 small ginger root (about 1.5" long)

1 TBSP Toasted Sesame Oil


LoMein Sauce Ingredients:

6 TBSP Oyster Sauce

2 tsp Toasted Sesame Oil

2 TBSP Soy Sauce

1/2 cup Chicken Broth

2 TBSP Cornstarch

1 ADDL TBSP toasted sesame oil (to cook in)


Directions:

In a medium bowl, mix 3 TBSP Teriyaki sauce, 2 TBSP Sugar, 1/4 tsp salt, 2 TBSP Siracha Oil, 3 cloves minced Garlic until well blended. Add thin sliced chicken breast. Cover, set in refrigerator for at least 1 hour. I marinade it all day for better taste, though!


In the mean time:

Take a bunch of green onions, wash them, cut off roots and cut them into about 1/2 inch slices on a bias. pace on a plate. Wash and cut broccoli into tiny pieces (about 1/4" florets. Place broccoli cuts on the same plate. Wash and peel a carrot, cut it on a bias and slice it thin using a peeler. Place thin carrot slices on its own section of the same plate. Mince 4 cloves of fresh garlic. Place on the same plate. Chop 1 small ginger root and put on its own section of the same plate. Cover plate and set in refrigerator until chicken is finished marinating.


Sauce Directions:

In a small bowl, mix 6 TBSP Oyster Sauce, 2 tsp Toasted Sesame Oil, 2 TBSP Soy sauce, 1/2 cup Chicken Broth, 2 TBSP Cornstarch into a bowl and whisk until well blended. Heat a wok, when smoking, add sauce and whisk until thickened. Pour it back into the bowl and cover and set aside.


Boil linguine noodles for about 13 minutes, drain, toss with toasted sesame oil and set aside. (I boil the noodles in a wok of water with 1/4 cup soy sauce for extra flavor)


After chicken marinated for at least 1 hour (but 5 hours is better!), remove all ingredients from the refrigerator and set aside. Get out wok, add 1 TBSP Toasted Sesame oil, heat until smoking turning wok to cover bottom and sides with the oil. When it is hot, add chicken using a strainer spoon (to avoid getting juices into wok)

cook on high heat quickly until chicken is done. (about 2 minutes) Remove from wok and set aside.


Heat wok on high with another TBSP toasted sesame oil, add broccoli and green onions. cook a minute, add carrot, garlic and ginger. Turn heat down to medium/low. Add noodles and meat and toss everything up. Add Sauce and toss more, until the ingredients are well-blended. Don't cook more than 1 minute! Remove from heat. Serve piping hot with CRAB RANGOONS!
