Lemongrass Chicken Stix (Copycat Trader Joes)

Wow. Trader Joes Just discontinued one of my favorite TJ Foods! The Lemongrass Chicken Stix are now a thing of the past. Fear not! You can make an identical version at home! It just takes a food processor, ingredients and some time and you will have the long lost item in your hands again! Make sure to go to Trader Joes and grab a bottle of the delicious Gyoza Sauce, though! These crispy stix and that tangy sauce are a perfect meld of delicious tastes! You can use Spring roll wraps, but the TJ ingredients list resembles wonton ingredients. If you replace cabbage with tri-color slaw mix like I did, they will be a bit more colorful inside than the original but the taste doesn't change! #SoNomNom4U #TraderJoesCopycatLemongrassChickenStix





1 lb boneless skinless chicken breasts, boiled and food processored (Vegetarians OMIT THIS)

1 cup of cabbage, chopped fine in food processor (I used 3 color slaw mix)

2 (3-inch) sticks of lemongrass, pulverized in food processor

3 green onions, pulverized in food processor

2 TBSP fresh ginger, peeled and pulverized in food processor

2 TBSP cornstarch

2 oz Lemongrass paste (in produce in a tube near the herbs)

1 tsp salt

1 tsp fresh cracked pepper

Wonton Wrappers


Directions:

Bring a small pot of water to a boil and add chicken breasts. Boil until they reach internal temp of 165°, drain and pulverize in food processor, dump into a bowl and set aside.


In the cleaned out food processor, add cabbage (or slaw mix), lemongrass sticks, green onions, and ginger. Pulverize all ingredients until it is finely chopped. Pour into a fine mesh sieve and push to get all the juices out. Dump back into a bowl and add lemongrass paste, salt, cornstarch and pepper. Add pulverized cooked chicken and stir until well blended


Heat deep fryer to 325°F. I like to use peanut oil, but any oil will work well.


On a clean work surface, open wonton wrappers and place one on the surface. Taking a spoon, gently scoop a small amount onto the middle of the wonton wrapper. forming a tube. Make sure and pack the filling pretty tight. Take the bottom of the wonton wrapper and place it over the tube of filling and roll tightly. Dip your finger in a small bowl of water and run it across the entire length of the wonton flap before rolling it completely into place. The ends will be open but the inside will be fine in the fryer as long as you packed it tight.


You can fry these immediately or place them on a baking sheet and cover them and put them in the freezer. When they are completely frozen, pour them in a zipper bag and keep them in the freezer until you are ready to deep fry them.


Serve with Trader Joes Gyoza Dipping sauce. These go great with MongoliNOM Pork!
