Perfect Hashbrowns

Don't buy those soggy quick hashbrown bags in the dairy section. They are soaking in chemicals that are not good for your family! Make your own! You get a lot more for your money. If you keep baked potatoes in your fridge, they can be whipped up into so many things so quick! #perfecthashbrowns #hashbrowns


Ingredients:

6 Russet Potatoes

1 tsp season salt

1 tsp fresh cracked pepper

1/4 cup light olive oil (for frying)


Hashbrown Directions:

Wash 6 russet potatoes, poke a fork in each one twice. Place the potatoes on a large plate and microwave them for about 20 minutes. If they are not about half-cooked, place them in the microwave for another 5 minutes. Repeat until they are halfway cooked. DOn't overcook or they are difficult to grate because they get mushy. Remove them from microwave and cool them until they no longer burn your hand (about 1 hour)


NOTE: it makes it a lot easier to keep whole pre-baked potatoes in the fridge all the time--then they cook faster for your potato dishes!


Using a knife or potato peeler, gently remove the peel from each cooled potato. Be careful not to remove the potato! After the peel is off, hand grate each potato onto a large plate. When all the potatoes are grated, set aside.


Heat 1/4 cup of oil in a large well-seasoned iron skillet (or non-stick pan) Iron skillet works the best. when the oil is hot enough that water sizzles when you place a drop of water in it, add the grated potatoes. Smash them down gently so there are no holes showing. Don't over-smash! Cook them for at least 5 minutes. Gently check the other side by lifting it with a spatula on the edge a tiny bit.


When the other side is a dark golden, use the spatula to make a cut line vertically down the center. Use the spatula and cut them again down the horizontal center, so a cut X is going through the pan of hash browns.


Using a spatula, take each section one at a time and flip it over. Repeat until all sections are flipped and cook until the other side is a dark golden brown. When all sections are dark golden brown, remeove heach section from the pan, place on a plate and sprinkle with season salt over the top.

Serve hot.
