Cheese Manicotti

What an ooey, gooey, cheesy delight! This meal consists of delicious manicotti tubes, stuffed with a cheesy filling, lying in the midst of delicious homemade red sauce, smothered in mozzarella and baked to perfection. #Sonomnom4u #CheesyManicotti #CheeseManicotti #Manicotti #BESTMANICOTTI




Filling:


1 (32 oz) tub of whole milk ricotta


1 egg


1/4 cup chopped fresh flat italian parsley


2 cups shredded mozzarella


1/2 cup freshly shredded parmesan


1 tsp garlic salt


4 cloves garlic, chopped


1 medium onion, chopped


1/4 cup white wine



Filling Instructions:

In a small pan, add olive oil, chopped onion and chopped garlic. Saute until it is translucent. Add 1/4 cup wine to deglaze. cook until wine cooks out. Set aside to cool.


In a large bowl, add ricotta cheese, mozzarella cheese, an egg, and fresh chopped parsley. Stir in cooled down onion and garlic. Mix well and set aside.



Noodles:


Boil noodles per direction on package (About 10-12 minutes), rinse in cold water to cool completely. Set aside.


Topping Ingredients:

2 cups shredded mozzarella


1/2 cup shredded parmesan



Sauce Ingredients (or buy jarred sauce)



3 TBSP Olive Oil



5 cloves fresh garlic, minced



2(6 oz) can tomato paste



3 TBSP Balsamic Vinegar



3 oz white wine



2-1/2 cups water (use 1-1/2 cups of water of making pizza sauce)



3 TBSP sugar



1 TBSP basil



1 TBSP Oregano



3 tsp Thyme



3 tsp Red Pepper Flakes



1 tsp white pepper



1 TBSP garlic salt



1/4 cup parmesan cheese


1/2 cup cream



Sauce Instructions:


Heat Olive oil in large saucepan, add garlic and stir. Cook for about a minute and the tomato paste. Wisk the water, wine and balsamic into the tomato paste completely to remove any chunks. Add the rest of the ingredients, except the cream and simmer on low until sauce is thickened a bit. Bring to a heavy simmer. Add cream. Stir completely. Remove from heat and cool down a bit.



Assembly Instructions:


Preheat oven to 375 F


Put 2 ladels of sauce in the bottom of a 9"x13" pan.


Fill each tube completely with cheese mixture. Place each filled pasta tube into the pan of sauce.


Repeat with all filled noodles until they are all full and the pan is full of filled pasta tubes.


Pour any remaining filling over the tubes and spread it around (if you have any.


Ladel 2 more ladels of sauce over the top of all the stuffed pasta tubes. SPread evenly to coat the top of all the tubes.


Top all the coated tubes with shredded mozzarella. Top with chopped fresh italian parsley. Bake for about 40 minutes or until dish is bubbly and cheese is melty.


Remove from oven and cool about 5 minutes before serving.
