Grilled Chicken Philly Cheese Sandwiches

This Grilled Chicken Philly Cheese Sandwich is my take on a Philly Cheesesteak if a Philly Cheesesteak was made with chicken!!

This sandwich is great served with Hand cut fries and Country Salad! Make your meal today!



1 loaf of french bread (buy or make it!)

4 TBSP butter

1 tsp garlic salt

2 tsp black pepper


filling:

3 boneless, skinless chicken breast halves, grilled and shredded

1 onion sliced thin

1 bell pepper, chopped

sprinkle of red pepper flakes

2 TBSP olive oil

2 TBSP butter

1 tsp chicken bouillon powder or 1 cube

1 tsp black pepper (I prefer course ground)


cheese blend (I make my own)

4 oz mozzarella

4 oz. monterey jack

4 oz sharp white cheddar

4 oz gruyere


To make:

Preheat oven to 425


Preheat grill. Butterfly each half of the boneless, skinless breast to cook faster, rub with salt and pepper. Place chicken on the grill and cook the chicken to an internal temp of 160°F . Remove from grill and shred with a fork or in a stand alone mixer with the paddle attachment. Set aside. Turn oven down to warm.


Cut bread in half vertically. Melt 4 TBSP butter in a small bowl. Add 1 tsp garlic salt and 2 tsp black pepper. Stir and spread onto each half of the french bread, using a basting brush. Place each half of the bread flat side up on a baking sheet and bake about 10 minutes. Remove from oven and set aside.


Add 4 oz mozzarella, 4 oz. monterey jack, 4 oz gruyere and 4 oz sharp cheddar into a food processor and pulsu until you have a crumbly blend--set aside.


In a skillet (I use iron), add olive oil, butter, onion, bell pepper, red pepper flakes 1 tsp (1 or cube) bouillon powder, and 1 tsp black pepper. Cook until onion becomes translucent. Turn off heat and pour in grilled, shredded chicken. Add 1-3/4 cup cheese and stir until you have a thick, melty mess of chicken, cheese, onions, and nomnom!


Grab the toasted bread halves and place generous amounts of chicken mixture all down the bottom half of the bread. add the other 1/4 cup of cheese across the top of the filling. Place bread lid on and place into a warm oven for about 5-10 minutes or until top bread is crusty and cheese is melted.


Cut and serve hot and crispy!
