Easy Method Chicken Noodle Soup

This Easy Method Chicken Noodle soup is easy and delicious! Make your own dumpling noodles to add a special touch and a more delicious end result! #SoNomNom4u


1-1/2 lb boness, skinless breasts or thighs (This is the easy method but just as delicious! !)

2 large carrots, washed, peeled, and sliced

3 stalks of celery, washed and chopped

1 large onion, cleaned, peeled and chopped

3 cloves of garlic, chopped

2 TBSP Olive Oil

1/4 cup fresh parsley, washed and chopped (can use dried)

12 cups (3 boxes) chicken stock

1 TBSP fresh Thyme (can use dried)

2 tsp Black pepper


In a large pot, Heat olive oil. When heated, add Carrots, celery, onion, and garlic. Cook until onion pieces are translucent. Add whole chicken pieces and broth. Put lid on pot and boil for about 20 minutes. Remove chicken and place in stand alone mixer with paddle attachement to shred, or shred with a fork. Return chicken back to the soup. Add Thyme, pepper and noodles and boil for about 12 minutes. Reduce heat and put lid back on pot and simmer on low for about 30 minutes. Serve hot!


If using an Instant Pot:

On Saute option, heat olive oil. When heated, add Carrots, celery, onion, and garlic. Cook until onion pieces are translucent. Add whole chicken pieces and broth. Put lid on pot with pressure pointer in center. Use Manual option and set to 12 minutes. If chicken is frozen, set for 25 minutes. Remove chicken and place in stand alone mixer with paddle attachment to shred, or shred with a fork. Return chicken back to the soup. Add Thyme, pepper and noodles and set on Manual for about 12 minutes. When Instant POt is ready, carefully remove lid, stir and Serve Hot!
