Simple Panera Copycat Asiago Roast Beef

This used to be my favorite item on Panera's (Bread Co in STL!) menu, many years ago--Then they changed it, made it smaller, removed the roast beef, cut down on the meat and called it a "steak" sandwich. NOPE. Not the same. Now there is a way to get the craving for the old Asiago Roast Beef sandwich! Make it yourself! So worth it! #AsiagoRoastBeef #PaneraCopycat #sonomnom4u



Sandwich Ingredients

1 long loaf of french bread (Make or buy it!)

1/3 cup freshly grated Asiago Cheese

20 slices roast beef

5 slices sharp cheddar cheese

5 large leaf lettuce leaves

1/4 large red onion, sliced thin

1/2 cup horseradish sauce (recipe below)


Horseradish Sauce Ingredients

1/2 cup mayonnaise

2 TBSP Prepared Horseradish

1/4 tsp salt

1/4 tsp pepper


Bread Directions:

Preheat over to 400° Line a large baking sheet with parchment. Cut bread in half lenghtwise. Take the top only and place it sliced side down on the lined baking sheet. Grate Asiago over the top of the top bread. Place in oven and bake for about 5 minutes (until the cheese starts to bubble.


Remove from oven and place on top of the room temperature bottom piece of bread. Let top bread cool completely before making the sandwich.


Horseradish Directions:

In a small bowl, mix mayonnaise, prepared horseradish, salt and pepper until fully blended. Set aside.


Sandwich Assembly Directions:

Spread a thin layer of horseradish sauce on the inside of the top bread. Set top bread aside.

On the bottom bread, evenly layer 20 pieces of roast beef across the cut part of thebottom bread. top roast beef with one layer of sliced cheddar cheese. Add onion slices and lettuce. Place top bread on top and cut into pieces to serve. 1 sandwich Serves 3 (6 inch sandwiches)

Serve with chips and a pickle.
