Ingredients
2 lb beef (any cut works!)
16 oz. baby carrots
1 onion, finely chopped
3 stalks of celery, finely chopped
1 can tomato paste
3 cans of water (refill tomato paste can with water x3)
6 potatoes
salt & pepper to taste
All in one method:
In a large crockpot, add tomato paste and water and stir until blended. Add all other ingredients and place lid on crockpot. Leave on low or auto for about 6 hours.
Layered time method:
In a large crockpot, add chopped onion, meat and celery. Cook on high heat about 10 minutes. Add Carrots and place lid on crockpot. Cook 2 hours. Add potatoes after 2 hours is up and place lid on and cook for another 3-4 hours on low or auto.
Serve hot. Sprinkle with salt and pepper. Goes great with warm, buttered Hawaiian rolls and salad!
