Stuffed Pork Loin Pinwheel

Its amazing how you can take a big, solid chunk of meat and make it a flat work area to place the perfect stuffings! You can add anything to the center of these! I am posting 2 filling recipes for you to choose from, complete with lots of photos! #SoNomNom4u


Stuffed Pork Loin Pinwheels

Choose your own center!


1 (3 lb) Pork Loin. (Don't use tenderloin for this recipe--its too small)

2 TBSP Olive Oil

salt & pepper to taste or Cash Cow Seasoning


If you choose the pepperjack bacon filling:

1/2 cup real bacon pieces

1 cup shredded pepperjack cheese


If you choose the spinach filling:

1 bunch fresh spinach, chopped (kale also works great for this)

1 small onion, chopped

3 cloves garlic, chopped

4 slices prosciutto, chopped

Place everything in food processor, except prosciutto, CHop that by hand and combine it all together in a bowl. Set aside.


Take the pork loin roast, and using a knife, carefully make a slit across the top of the roast lengthwise. insert knife about an inch deep all the way across the top. Now, with knife still in the topuse knife to turn right or left and with knife about an inch deep, cut as shown in image below.

After meat is cut and flattened, place in a large zipper bag and pound it with a mallet, flip it and pound the other side, too. Remove from bag and lay on a large platter. Season one side of the meat with salt and pepper and sprinkle your stuffing choices across the entire area of the flattened meat.


After entire area is covered with your choice of stuffing, take one end and roll the meat and stuffing up tightly. You can use cooking string or toothpicks to secure the end down.


Place rolled roast on a rack on a baking sheet. Rub it with olive oil and season all sides with salt and pepper or we love Cash Cow Seasoning!


Place in 350° F oven and bake for about 60-90 minutes (depending on size of roast and your oven)


When the internal temp of the roast reaches 160°F, remove roast from the oven and let stand approximately 10 minutes. Slice into 1" slices and serve. (Serve kale/spinach one with a melted butter drizzle. )
