Have a taco salad tonight! So many people think salads are boring! NOPE! There are so many ingredient options, how can you ever get bored? This taco salad is made with steak, but you can replace it with chicken, taco meat, or even no meat! Notice both pictures have a bit of a different blend. Taco Salad
1 head of green leaf lettuce
8 oz. shredded, seasoned, grilled, chilled steak (or chicken, taco meat, etc)
1/2 cup shredded cheddar
10 grape tomatoes
1 bunch green onions, chopped
1/4 cup sliced black olives (optional)
1/4 cup salsa (optional)
1/4 cup guacamole (optional)
Chipotle Ranch (Chipotle powder & Litehouse Ranch) (See below) (You can use sour cream & salasa instead!)
1/4 cup crushed tortilla chips
Taco Steak:
2 lb london broil or sirloin
1/4 cup olive oil
1/4 cup water
2 TBSP cumin
1/2 fresh squeezed lime
2 tsp cracked black pepper
2 tsp salt
2 tsp chili powder
Make Taco Steak:
In a medium bowl, add 1/4 cup olive oil, 1/4 cup water, 2 TBSP cumin, 1/2 fresh squeezed lime, 2 tsp cracked black pepper, 2 tsp salt, 2 tsp chili powder. mix all together. Add steak and flip steak so marinade coats the entire steak. Sink meat into marinade. Cover and refrigerate 2 hours. Remove from fridge. Toss marinade.
Grill steak to 140° F. Bring in and slice thin, or cut into large chunks and toss into the stand alone mixer with the paddle attachment and shred. Set Aside.
Make the Chipotle Ranch
Add 2 tsp Chipotle Powder to 1 cup Litehouse Ranch. Set Aside.
To make salad:
In a large bowl, add chopped lettuce, green onions, chredded cheddar, grape tomatoes, shredded cooked steak, and any other ingredients you choose. Pour on chipotle ranch (unless you're using sour cream and salsa) and serve with a side of crushed tortilla chips.
