Spider Web Pancakes

1 cup heavy cream

1/2 cup sour cream

1/4 cup turbinado sugar

2 eggs

2 tsp vanilla extract

1-1/2 cups bread/pizza flour

2 tsp baking powder

1 tsp salt

butter for the pan

real maple syrup for drizzle

Blackberries

Tiny writing icing tube of white


In a large bowl, add all heavy cream, sour cream, sugar, eggs, and vanilla. wisk until completely smooth and blended. Sift flour, baking powder and salt into the wet ingredients. Whisk until mostly smooth. Don't over-mix.


Pour batter into a piping bag or a zipper bag with the corner cut off.


Heat a nonstick pan or griddle. Brush with some butter and allow it to melt and cover the surface. Don't burn the butter or rush the process.


Keep the heat on medium and Create an X in the center then another X offset from the original X. Now, pipe more batter along the outside edge in an arched fashion to connect the lines. Work fast or it will brown unevenly.


When it bubbles all over, flip the pancake and when it poofs a bit, let it cook about 30 seconds more and remove from pan. Place on a plate and repeat with batter until all pancakes are made and stacked.

Now, using your tiny tube of writing icing make 2 dots on the blackberries to resemble eyes. Add blackberries to the plate and serve.


Serve hot and fresh with butter and maple syrup.
