Red Pepper Parmesan Pasta

Red Pepper Parmesan Pasta is one of my daughter's favorite meals. Simple and delicious, this may be a new addition to your list of easy, fast meals! Remove chicken to make this a delicious vegetarian meal! #SoNomNom4u #RedPepperParmesanPasta



1 box of penne, rotini or other pasta

water, to boil in

3 TBSP salt

2 TBSP olive oil


1 red pepper, chopped

1 boneless, skinless chicken breast, chopped

4 cloves of garlic, minced

1/4 cup parmesan

1 tsp back pepper

1 tsp salt

2 tsp basil

2 tsp oregano

1 tsp thyme

1 lemon, squeeze completely

1/2 cup extra virgin olive oil +4 TBSP olive oil

4 TBSP butter


Bring a large pot of water to a boil. Add 3 TBSP salt and 2 TBSP olive oil. Add pasta and cook per directions on the pasta box. TIme will vary based on type of pasta you chose and your doneness preference. Drain, toss with olive oil to prevent sticking and set aside.


In a skillet, add 2 TBSP olive oil Add chopped raw chicken and cook until it is almost completley cooked. Remove from pan. Add 2 TBSP olive oil and heat. When it is hot, add chopped garlic and chopped red pepper. Cook for about 4 minutes and remove from oil.


Now, add 1/2 cup olive oil to the skillet. Add 4 TBSP butter, 1 tsp black pepper, 1 tsp salt, 2 tsp basil, 2 tsp oregano, 1 tsp thyme, and the juice of 1 freshly squeezed lemon. Stir until everything is mixed well. Remove from heat and set aside.


Now, make sure there is no water left in the pot you cooked the pasta in. Pour your drained, cooked pasta back in the pot and add the cooked chopped chicken. Now add the red pepper/garlic mixture and add the seasoned olive oil/butter sauce and parmesan cheese. Toss to coat pasta and serve hot with garlic bread.
