1 (16 oz.) package of fettucine or fettucine nests
water to boil
2 TBSP Olive oil
2 TBSP salt
4 TBSP butter
2 cloves fresh garlic, minced
2 cups heavy cream
1 tsp black pepper
1/4 cup gorganzola cheese crumbles
1/4 cup Parmesan cheese, freshly grated
1/4 cup Mozzarella, shredded
1/4 cup Fontina, freshly grated
Directions:
Fill pot with water. Add 2 TBSP Olive oil and 2 TBSP salt. Add pasta and cook according to package directions to desired doneness. Strain, toss with olive oil and set aside.
In a medium saucepan, melt 4 TBSP butter. Add minced garlic and cook for one minutes. Add heavy cream and whisk until well blended. Cook on medium heat, stirring often until cream and butter start to thicken. Don't give up, this will take about 10 minutes. When the cream is feeling more thick, add gorgonzola, parmesan, mozzarella, and fontina cheeses and stir until completely mixed and creamy smooth. Remove from heat and set aside.
Add a portion of strained hot pasta to a shallow bowl. Pour some sauce over the top and toss to coat all the pasta in that bowl. Repeat process with each serving and garnish with fresh basil or fresh parsley, and freshly grated cheese (choose one you added to the sauce already)
Serve hot with fresh french bread. SO NOMNOM!
