Pumpkin Pie is a tradition in most homes during Thanksgiving. Instead of heading to your local bakery, how about you make one yourself!? It is a very easy pie to make! Crust (makes 2) :
2 cups all purpose or bread flour
3 tsp sugar
1 tsp salt
1 tsp cinnamon
2/3 cup butter
4-5 TBSP cold water
Filling:
2 eggs
1/2 cup brown sugar
3 tsp ground cinnamon
1 teaspoon salt
1 tsp allspice
1 tsp vanilla
1 can (15 oz) pumpkin (not pumpkin pie mix)
1-1/2 cups Heavy Cream
Prep Directions:
Make sure oven rack is set up in the center of the oven--not too close to the top or the bottom.
Preheat oven to 425°F
Crust Directions::
In large bowl, stir together flour, salt, cinnamon, and sugar. Cut in 2/3 cup butter and blend until it is crumbly. Add 4 TBSP water and mix until dough is moist and well formed. If it is too fry, add the last TBSP of water.
Divide dough in half. Shape into 2 balls. wrap one ball in plastic wrap and put in the refrigerator while you work on other ball.
Flour a large, clean work surface and roll our ball into a 12" circle. It doesn't have to be perfect, but it does have to fit in the 9" pie pan. :-)
Gently fold dough into quarters. Do not press. Now pick up dough and place the point of fold in the center of the pie pan and unfold. Create a decorative edge by pinching the dough with fingers all the way around or pressing with a fork or decorative crimper. You can also make pretty cutout shapes to place around the edge after the pie is poured. Set aside. You can make 2 pies or freeze the other crust dough.
Filling Directions:
In a stand-alone mixer or large bowl with beaters, mix 2 eggs, brown sugar, pumpkin, cinnamon, salt, allspice, and vanilla until well blended. Slowly add the heavy cream and blend until everything is completely mixed and smooth.
Assembly Directions:
Pour pumpkin mixture into prepared crust.
Carefully take the poured pie to the oven and place it on the oven rack, located in the center of the oven. Bake 15 minutes. Reduce oven temp to 375°F and bake approximately 45 minutes. Pie is done when a toothpick inserted into the center of the pie comes out clean.
Place hot pie on a cooling rack and cool for about 2 hours.
