Pumpkin Chocolate Chip Cookie Bars

I got this recipe from an old friend years ago. Thank you LeAnne Finney Schaper! It has become a family favorite. (I changed the original recipe a tiny bit) You can make them into soft cookies (They're like muffin tops) or bars--Whichever you prefer! Pumpkin Chocolate Chip Cookie Bars


2 sticks of butter, room temperature (Original recipe uses shortening)

2 cup sugar

4 cup flour

2 cup pumpkin

2 tsp vanilla

1 tsp salt

2 tsp cinnamon

2 tsp baking soda

2 tsp baking powder

1 egg

12 oz bag chocolate chips


Preheat oven to 375°F


In a stand alone mixer or large bowl, cream butter and sugar; add egg, vanilla and pumpkin.


In a medium bowl, mix together flour, salt, baking soda, and baking powder.


Add dry mixture to the butter/sugar/egg mixture.


Mix well. Add choc chips.


For cookies:

Drop spoonfuls of rounded batter (about 1/5" mounds) onto a cookie sheet, leaving a couple of inches between mounds. Bake 10-15 minutes, depending on oven and preference of doneness. We like our extra soft.


For cookie bars:

Pour dough out onto a large baking sheet (I use 12" x16") that was covered with foil and sprayed with nonstick oil spray. (THis makes cleanup so much better!). Spread all the cookie dough eavenly to all corners and smooth the top with a rubber scraper. Bake 25-35 minutes (ovens vary). Cookie bars are done when toothpick comes out clean. Remove from oven, let cool, cut into bars and ENJOY the NOMNOM goodness!!
