Potato Skins

Potato Skins are a great replacement for fries on burger night. Go all out and add these delicious treats--complete with sour cream and chives! Some people like salsa on them, too! #potatoskins #sonomnom4u #vegetarian



6 Medium Potatoes

2-1/2 cups cheddar cheese, shredded

1 bunch green onions, sliced

1/2 cup real bacon pieces

Sour Cream, on the side

Peanut Oil for frying


Preheat oven to 500°F


Scrub each potato thoroughly. Cut potato in half.

Using a spoon, scoop out a generous portion of each half. (You can also fry the scooped out stuff to avoid wasting it.)

Heat a deep fryer or a medium pot, filled 1/4 full with peanut oil to 425°F

Gently place each half into the fryer (you may need to do batches. Don't overload the fryer/pot!)

Fry until golden and crispy. Drain on paper towel or cooling rack with paper towels below it. Lightly sprinkle with salt.

Prepare a baking sheet with a piece of parchment.

Place each fried potato half on the parchment.

In each half, place about 1/8 cup of cheese and a sprinkle of bacon pieced. When each half is filled place in oven for 3-5 minutes.

Remove from oven and sprinkle with cold green onion pieces and serve hot with a side of sour cream.
