6 large potatoes, washed, peeled, shredded, and drained
1 egg
1/4 cup flour
1 medium onion, grated or finely shopped
1 tsp salt
1 tsp pepper
Oil
Make sure potatoes are strained and not too wet.
In a large bowl, combine everything until it is mixed very well.
Heat a large skillet or griddle with your choice of oil (I prefer peanut)
When oil is hot, drop about 3 ounces of potato mixture in the pan and spread out until flat. Place enough potato mixture in the pan where they don't touch once they are flattened. Cook until golden, flip and cook other side until golden and crispy. Remove from pan and place on a paper towel. Repeat until all potato pancakes are golden, crispy, hot and ready to serve!
