2 cups confectioners sugar
1-1/2 cups peanut butter
1 cup chopped peanuts
1 cup crispy rice cereal
6 TBSP butter, melted
1 tsp pure vanilla extract
1/2 tsp sea salt
10 oz semisweet chocolate pieces or cut into small pieces
1 tsp shortening
In a medium bowl, mix: 2 cups confectioners sugar, 1-1/2 cups peanut butter, 1 cup crispy rice cereal, 6 TBSP melted butter, 1 tsp vanilla, and 1/2 tsp sea salt until everything is combined.
Line a large tray with a piece of parchment paper.
Using a small scoop, scoop small mounds (about 2 teaspoons worth), one at a time and roll it into a perfect ball in your hand. Roll the ball into chopped peanuts. Place it on the parchment. Repeat until all balls are rolled and covered in chopped peanuts on the parchment.
Place the tray of rolled balls in the refrigerator, about 20 minutes.
In a small saucepan or microwave, melt the chocolate pieces and shortening together until it is chocolatey liquid and completely smooth.
Remove the balls from the fridge. Take a toothpick and stick it through the ball. Gently dip the ball into the chocolate and gently shake off excess chocolate. Place ball back on parchment lined sheet. Chocolate usually covers the toothpick hole on its own. Repeat until all balls are coated in chocolate.
Place the coated chocolate balls in refrigerator for about 4 hours. When the chocolate is completely hardened and firm, you can remove the balls and package them in gift boxes, tins, or jars. I recommend placing them in candy cups and keeping the candies refrigerated before and after gift giving.
