Updated: Jun 25, 2021

After making these, you may just chuck your other oatmeal cookie recipes in the trash. These are amazing! You can add raisins or leave them out--either way, they are delicous! #SoNomNom4u #OatmealCookies

2-1/2 sticks of butter, melted

1-1/2 cup brown sugar

1 egg

2 tsp vanilla

1-1/2 cups flour

1 tsp baking soda

1 TBSP cinnamon

1 tsp salt

3 cups Old Fashioned Oats

1 cup raisins, chocolate chips, both or none!(Optional)

Heat oven to 375° F

In a stand alone mixer with a paddle attachment or a regular mixer with beaters, beat the brown sugar andbutter. When well mixed, add the egg and continue beating it for a few seconds.

In a medium bowl, add flour, baking soda, salt, and cinnamon. Mix until well blended and slowly stir the dry mixture into the wet mixture while it is beating. Add the oats and raisins (if you'd like!) and mix until everything is completely blended.

Line 2 large baking sheets with foil or parchment.

Spray with nonstick spray.

Spoon 2 TBSP- 3TBSP of dough at a time into heaps about 3 inches apart on all sides. Flatten gently to shape into circles. (add 2 minutes for larger cookies. )

Bake 8-12 minutes. 8 for super soft cookies and 10-12 minutes for crunchier cookies.

Remove from oven, cool one minute on the baking sheet and using a spatula, gently transfer each cookie to a cut open paper bag on the counter or a cooling rack. Cookies will form better as they cool.

SO NOM NOM!!!
