This recipe takes banana bread to the next level of delicious! Who would have thought you could improve on banana bread, but here we are! BATTER:
2 cups of flour
1-1/2 tsp. Baking Powder
1/2 tsp baking soda
1/2 tsp salt
4 TBSP Cinnamon (This is not a typo!! People never write the amount large enough. I do. Trust me, its much better.)
2 eggs
1 tsp vanilla
6 bananas, ripe and smashed into a puree
1 cup dark brown sugar
1/2 cup butter, melted
1/2 cup chopped walnuts
1/2 cup chocolate chips
Preheat oven to 350°F. Set rack in the middle.
STREUSEL TOPPING
4 TBSP Butter, cut into pieces
1/4 cup rolled oats
1/3 cup brown sugar
1/4 cup flour
1 tsp Cinnamon
1/8 cup of Chocolate chips to sprinkle on top.
1/8 cup chopped walnuts to sprinkle on top
TO MAKE BANANA BREAD:
In a medium bowl, add flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Mix until blended. Set aside.
In a stand alone mixer or in a bowl with a hand mixer, add brown sugar, vanilla, and eggs. After it is well blended, add melted butter and banana puree and mix completely. Slowly add flour mixture one cup at a time until it is all mixed and well blended. Set Aside.
TO MAKE STEUSEL TOPPING:
In a small bowl, add butter that was cut into pieces, oats, sugar, flour and cinnamon. Using a fork, potato masher, butter cutter or whisk, break the butter up ito the other ingredients until you have a dough consistency. Set aside.
Grease 2 bread pans with butter. (using a disposable pan makes for less cleanup when it is gone) or spray it with nonstick oil spray. Pour batter into greased pan and fill it about 1/2 full.
Sprinkle streusel topping all over the top and gently press topping to make it stick better. Sprinkle top of streusel topping with chocolate chips and chopped walnuts.
NOTE: There will be extra batter! MAKE a smaller loaf, or fill two of the same size pans only half way. Batter freezes well, too--you can pour it into a marked zipper bag and freeze until you are ready to bake it! Make sure and save some struesel topping for the other loaf!
Place pan full of banana bread batter into the preheated oven. Make sure oven rack is in the middle position. Bake for approximately 50 minutes, check it often after 40 minutes. Banana bread will be ready to remove from oven when you insert a toothpick in the highest point and it comes out clean.
NOTE: Ovens vary, pan materials vary and amount of batter in pans vary. Cooking time will vary due to these variances.
