This is a very adaptable recipe. Truly it depends on what you like inside and out! The omelette shown it filled with ham, cheddar and onion. For an extra burst of flavor, you can add any small ingredients to your egg before you wisk it. (I did this with green onions, below!) (this recipe is for one person. Omelette:
2 eggs, beaten
1/8 cup heavy cream or milk (cream makes a smoother omelette)
Fillings: (choose from any of these or add your own!) MIX & MATCH!
Cheese:
1/4 cup cheese (your choice)
Some ideas:
Cheddar
American
Gruyere
Mozzarella
Fontina
Asiago
Pepperjack
Provel
Provelone
Meats:
3 TBSP cooked Bacon crumbles
3 TBSP cooked ham pieces
3 TBSP cooked sausage crumbles
Veggies:
1/4 cup hash browns
1/4 cup chopped green onions
1/4 cup cooked chopped green peppers
1/4 cup cooked chopped onions
3 TBSP jalepeno slices
1/4 cup sliced cooked mushrooms
Toppings/sides:
3 TBSP salsa
2 TBSP sour cream (for mexican omelette)
Anything goes, really! Mix and match, or choose your own.
To make the omelette:
First cook any of the items that are raw before you make the omelette--like the sausage, bacon, onion, peppers, etc....Set aside.
Crack the eggs into a bowl. Add cream/milk and wish until all one color and everything is well blended. If you'd like to add a fancy touch, mix in parsley, green onions, or anything else with a burst of color into the egg. Otherwise, this step is done.
Heat a small pan and spary it with a nonstick oil coating.
When pan is hot, pour egg mixture into pan and twirl around to make the egg go up the sides of the pan higher.
Take a simple spatula/bowl scraper, slide around the edges and turn pan to get the raw egg into the side and bottom. Keep doing this until there is no raw egg in the pan and it isn't glistening.
When egg looks cooked all the way through, turn off heat. Now, you can either flip it or leave browned part on the outside.
Now, place the toppings of your choice on half of the egg. Taking the simple spatula/bowl scraper, ease the egg up a bit from the pan and fold it in half over the toppings.
Gently slide omelette out of pan and onto a plate.
You can serve it as is, or sprinkle the top with cheese /toppings and let it melt before serving.
Serve hot and fresh!
