Loaded Baked Potato Soup

8 large potatoes, peeled, washed, and cut into 1" cubes

water to boil potatoes

3 cups finely shredded cheddar (+ 1 cup to serve for garnish)

1 cup velveeta, cubed

1 cup of bacon, cooked crispy and crumbled (VEGETARIANS CAN OMIT THIS)

1 bunch of green onions, cut (plus a few Tablespoons to serve for garnish)

about 6 cups of milk (You can decide based on the consistency you prefer)

1 tsp fresh cracked pepper

2 tsp season salt

1 cup soup cream + garnish


Stovetop Method:

Wash, peel and cut the potatoes into cubes. Place the cut pieces into a large pot and fill with water about 2 inches over the top of the potatoes. Boil for about 25 minutes or until potatoes are soft. Drain and place in a stand alone mixer or a bowl with beaters. Add 1 cup of milk and mash until they look like mashed potatoes.


Place all the mashed potatoes back into the large empty pot and add all the milk. Whisk until it is all blended and the consistency of soup. Turn heat up to high until soup begins to warm up and get hot enough to melt cheese. When it gets to a simmer, add the cubed velveeta, shredded cheddar, bacon, green onions, soupr cream, cracked pepper and season salt. Stir until everything is melted and completely blended. Turn heat off, place a lid and serve hot. Serve with Sour Cream, Shredded cheddar and green onion garnish.


Instant Pot Method:

Wash, peel and cut the potatoes into cubes. Place the cut pieces into the Instant Pot and fill with water about 2 inches over the top of the potatoes. Set it to MANUAL 20 minutes. Make sure the pressure release valve is in the center position. When the process completes, drain and place in a stand alone mixer or a bowl with beaters. Add 1 cup of milk and mash until they look like mashed potatoes.

Place all the mashed potatoes back into the emptuy Instant Pot and add all the milk. Whisk until it is all blended and the consistency of soup. SET MANUAL 1 minutes. When it finished this process, open the lid and add the cubed velveeta, shredded cheddar, bacon, green onions, soupr cream, cracked pepper and season salt. Stir until everything is melted and completely blended. Set Pot to WARM and keep lid on. Serve with Sour Cream, Shredded cheddar and green onion garnish.
