Leprechaun Patties (Oatmeal Cookies)

This is just my delicious oatmeal recipe! I pumped it up a bit with some green food coloring! Enjoy these after your Corned Beef and Cabbage dinner or after your Green Eggs & Ham (We make this instead!) #Sonomnom4u #OatmealCookies #LeprechaunPatties #StPatrickCookies


2-1/2 sticks of butter, melted

1 tsp-1TBSP Green food coloring. As these bake, they lighten in color add more for darker green!

1-1/2 cup brown sugar

1 egg

2 tsp vanilla

1-1/2 cups flour

1 tsp baking soda

1 TBSP cinnamon

1 tsp salt

1 cup raisins (Optional)

3 cups Old Fashioned Oats


Heat oven to 375° F


Melt Butter and mix food coloring until well blended.


In a stand alone mixer with a paddle attachment or a regular mixer with beaters, beat the brown sugar and green butter. When well mixed, add the egg and continue beating it for a few seconds.


In a medium bowl, add flour, baking soda, salt, and cinnamon. Mix until well blended and slowly stir the dry mixture into the wet mixture while it is beating. Add the oats and raisins (If you'd like!) and mix until everything is completely blended.


Line 2 large baking sheets with foil or parchment.

Spray with nonstick spray.

Spoon 2 TBSP- 3TBSP of dough at a time into heaps about 3 inches apart on all sides. Flatten gently to shape into circles. (add 2 minutes for larger cookies. )


Bake 8-12 minutes. 8 for super soft cookies and 10-12 minutes for crunchier cookies.

The longer you bake these, the less the green shows. Add more color if you want a greener baked cookie.


Remove from oven, cool one minute on the baking sheet and using a spatula, gently transfer each cookie to a cut open paper bag ont he counter or a cooling rack. Cookies will form better as they cool.
