Marinade the chicken for a Lemon Pepper Kabob meal that melts in your mouth! #SoNomNom4u
These are a great quick dinner! Cut everything ahead of time, and leave chicken in the marinade as little or as long as you'd like! The longer it marinades, the more flavors are absorbed!
Lemon Pepper Chicken Kabobs
3 boneless, skinless chicke breast, trimmed and cut into large pieces
2 medium or one large red onion, quartered
2 bell peppers, seeded and cut into chunks
4-8 long stainless skewers (depending on how many people you are feeding!)
Cash Cow, lemon pepper, or another seasoning
Add any veggies/meat/seafood you want! We love shrimp, too!
Marinade:
Juice of 1 lemon
Fresh Cracked Pepper (I do about 20 turns on the grinder)
2 cloves of fresh garlic, minced
1/4 cup Extra Virgin Olive Oil
1/4 cup water
Stir everything together and place chicken pieces in it, cover and refrigerate until you're ready to skewer it. 30 minutes or even overnight!
Preheat your grill to about 350°
Alternating chicken, onion, pepper in any pattern, place items onto skewer.
When all chicken is skewered, pour out remainder of marinade.
Place skewers onto preheated grill and cook until the internal temp of the chicken is 165°
Serve alone, with your fave side, or over a bed of rice!
