Gyros

Do you love gyros? Make your own! You can double the meat recipe and freeze enough for 3 future gyro meals or just make one batch and have leftovers the next day! Homemade tzatziki sauce and homemade meat make these extraordinary!



GYRO MEAT

2 lbs 90% lean ground beef (or 1 lb. 90% lean ground beef and 1 lb. Ground lamb)

1 onion, minced

4 cloves garlic, minced

2 tsp Thyme

2 TBSP Cumin

2 tsp Rosemary

2 tsp oregano

2 tsp salt

2 tsp fresh cracked pepper

1TBSP Cavenders greek seasoning


TZATZIKI SAUCE

16 oz Full Fat Greek unflavored yogurt

1 small cucumber, with peel on (or 1/2 large cucumber)

1 tsp vinegar

2 TBSP fresh chopped dill

1 tsp salt

3 cloved fresh garlic, minced

2 TBSP Olive oil


Packaged Pita Bread


Toppings:

Choose from:

shredded lettuce

Kalamata Olives

Feta Cheese

Sliced tomatoes

Red Onions

Red Peppers

hummus


Preheat oven to 325 F

Meat Directions:

In a food processor, chop onion and garlic. Add ground meats and all seasonings in small batches, one handful at a time. Remove it and place in a large bowl as it gets very ground and mixed. Add another small batch and repeat until all meat is finely ground.


Using your clean hands, mix all meat so it is well blended with the seasonings, onion and garlic.

Place in a loaf pan, pressing hard to remove any air pockets. Fill a foil pouch with rice the size of the top of the meat and place it on as a weight.


Bake for about 30 minutes and carefully drain the juices out. Place back in oven and bake about 40 minutes more uncovered, or until meat reaches internal temperature of 165 F.

Remove from pan and place on a cooling rack over foil to cool. After about 1 hour, wrap in foil and place in fridge to cool completely.


When completely cooled, slice thin and slice each slice in half vertically.

Before placing in a gyro, brown each slice in olive oil and sprinkle with Cavenders Greek Seasonin.


Tzatziki Sauce Directions:

Grate cucumber and place in a strainer or cheesecloth. Strain COMPLETELY until it is no longer drenched. Press hard on it until most of the liquid is drained.


In a large bowl, add yogurt, shredded cucumber, minced garlic, vinegar, olive oil and salt. Stir completely. Add dill and stir completely. Serve with Gyros.


Gyro Assembly Directions:

Place in pita with toppings and sauce.

Choose from: tzatziki sauce, shredded lettuce, red peppers, kalamata olives red onion, sliced tomato and hummus and feta.


Eat and enjoy! These are amazing with Greek Slaw and Hand Cut French Fries!
