1 cup 100% whole wheat flour

1 cup all purpose flour

1/4 cup brown sugar

1 tsp. salt

1 tsp cinnamon

1 tsp. baking powder

1 egg

1/4 cup canola oil

1/4 cup honey

3-5 TBSP whole cream, buttermilk, milk, or half & half

In a stand alone mixer, add 1 egg, canola oil, brown sugar, honey and milk/cream. Mix completely.

In a medium bowl, mix whole wheat flour, all purpose flour, salt, cinnamon, and baking powder.

With the mixer on low, add the dry mixture to the wet mixture and mix until everything is combined into a thick dough. If the dough is too dry, add more milk/cream. Dough should be firm and stiff but not dry. Knead for a few minutes by hand to incorporate all the ingredients. Form into a ball, wrap in plastic wrap and refrigerated for an hour.

Line a large baking sheet with parchment paper.

After 1 hour, remove dough from the refrigerator and divide the ball in half. On a lightly floured surface, roll the dough out so it is 1/16" thick all the way across the entire surface of the dough.

Using a graham cracker cutter, knife, or a pizza cutter, cut into 2"x3" rectangles. If you do not have a graham cutter, use a skewer or fork to poke holes. Gently place cut grahams on the parchment lined baking sheet.

Bake for 25-30 minutes. Then, turn off oven and open the door all the way but leave the grahams in the oven. After 5 minutes, close the oven door and set the timer for 20 minutes. After 30 minutes is up. remove the sheet of graham crackers from the oven and place each one on a cooling rack.

After they are completely cooled, you can store them in a covered container for about a week, or freeze them for 3 months.

These are great to make S'mores with!
