Gooey Butter Cake

Anyone from St. Louis knows Gooey Butter Cake is a delicious treat! Who can possibly decline an ooey, gooey square of Gooey Butter Cake? Don't run out and buy one--homemade is best! Make one today! So easy you won't know why you didn't try sooner!


Crust:

1 box of yellow cake mix (Don't have one? See substitution below!)

1 stick of butter, melted

2 eggs, beaten

NOTE: Substitute 2-1/4 cup flour, 1-1/2 cup sugar, 3-1/2 tsp baking powder, & 1 tsp salt if you don't have cake mix on hand. Mix it all together and now you do!


Filling:

1 (8-oz.) block of cream cheese, at room temperature

2 eggs

2 cups confectioners' sugar (+1/8 cup for top of cake)


Preheat oven to 350°F


Directions:

Mix cake mix, melted butter and 2 eggs until completely blended. Press mixture into a 9"x13" baking dish. Set Aside.


In a stand-alone mixer, or bowl with beaters, mix cream cheese and 2 eggs until well-blended. add powder sugar and mix until creamy.


Pour filling onto the crust you pressed in the baking dish.

Bake at 350°F for about 30 minutes.

Let cool completely in the refrigerator and dust the top with sifted confectioners' sugar before cutting and serving. Serve cold.
