Fried Rice

2 cups of Jasmine or Basmati Rice

2 cups of water

5 TBSP Toasted Sesame Oil

1 egg, scrambled

1 Carrot, washed, peeled and sliced thin (I use a potato peeler to slice!)

5 green onions, sliced

2 TBSP fresh Ginger, peeled and chopped

4 cloves of fresh garlic, chopped

2 TBSP Onion powder

1 tsp Red Pepper Flakes

1 dash garlic salt

4 TBSP Soy sauce

2 tsp rice vinegar

Easy Instant Pot Rice

Follow instructions on package of rice, or use the Instant Pot for pefect rice!

Measure 2 cups of rice and place in mesh metal strainer.

Rinse with cold water for about 5 minutes, making sure to rinse all areas and mix rise as you rinse. Water should run clear.

Place rice in instant pot with 2 cups of water. Using MANUAL setting, set time for 4 minutes and make sure the release valve is in center position. When finished cooking, release pressure and unplug instant pot. Let rice cool down a bit so you can easily lift pot without burning yourself!

In large wok, heat sesame oil until wok begins to smoke a bit, add egg, green onion, carrots, garlic and ginger. Add rice and use a paddle or spatula, break clumps until there are no clumps and rice is fully mixed with the other ingredients in the wok. Add onion powder, red pepper flakes, garlic salt, soy sauce, and rice vinegar. Toss until everything is completely mixed. Remove from heat and serve hot.
