Fire Grilled Pizzas
Crust:
1 (.25 oz) package of Active Dry Yeast
1 tsp sugar
1 cup of water (warmed to about 95°F)
3 cups bread /pizza flour
2 TBSP LIGHT Olive Oil
1 tsp. salt
Sauces of your choice. (Pizza sauce, pesto, olive oil/garlic, taco saco, alfredo, etc....BE CREATIVE!)
Toppings of your choice
Cheese of your choice
To make dough:
In a stand alone mixer, or by hand--add water and sugar into the bowl. Sprinkle yeast packet over water until it is empty. Let stand about 5 minutes, or until the yeast is starting to foam.
When yeast is foamy, add oil and salt, then add flour, one scoop at a time until all flour is mized and a ball of dough is formed. Let dough rise for 1 hour.
After 1 hour, portion dough. This recipe makes 4 (decent size) this crust individual pizzas, 1 large thick crust pizza, or 2 large thin crust pizzas.
When dough is portioned, let rise 30 minues and then roll each portion out to the desired thickness and size. Rub LIGHT olive oil over each side of each crust you make. I like to place them layered with parchment between them so I can carry them to the grill easily. (If you are not grill all the dough. Now is a great time to freeze it in a zipper bag--they thaw very nicely!)
To make Crust:
Brush residue off grill and spray with nonstick oil spray.
Heat grill to about 600°F
Carefully lift the portioned, rolled dough off the tray. I use parchment to lift it and by turning it upside down, you can easily place dough on VERY HOT 600°F grill. when dough starts to bubble, using tongs, gently unstick any stuck surfaces and flip dough to grill the other side. When both sides are grilled and crust feels solid enough to lift, place on a plate. Repeat until you finished all crusts. leave grill on to keep it really hot and go inside to build the pizzas. You are coming back to the grill though!
Bring crusts over by your pizza making station and create your pizza(s) (FIrst, spread on sauce of your choice, then cheese of your choice, and then toppings of your choice. Sprinkle with herbs of your choice (I like basil and pepper flakes)
When pizzas are are assembled, place them on a pan, plates, or whatever you wish to use to hold them.
To cook pizzas:
Go to the grill and place pizza(s) on grill and close the lid. Turn grill down really low or off. THe grill has been 600°F so it should still be hot enough to bake 1-3 batches of pizzas on low heat or off. check pizzas to see if the cheese is all melted and ready to serve (probably will take about 3-5 minutes. When it looks delicious and melty, remove pizza(s) from the grill with tongs or spatula and place on plate(s) or Pan. Using puzza cutter, cut pizza!
Serve hot and NOM NOM!
Crusts will be CRISPY and fire grilled!
NOTE: Don't worry about imperfect shapes. Anyone know that a grilled pizza is never a perfect circle. The imperfect shape is part of the delicious taste!
