1 cup heavy cream
1/2 cup sour cream
1/4 cup turbinado sugar
2 eggs
2 tsp vanilla extract
1-1/2 cups bread/pizza flour
2 tsp baking powder
1 tsp salt
butter for the pan
real maple syrup for drizzle
2 (80%+) Dark chocolate bars
2 TBSP Butter
Directions
In a large bowl, add all heavy cream, sour cream, sugar, eggs, and vanilla. wisk until completely smooth and blended. Sift flour, baking powder and salt into the wet ingredients. Whisk until mostly smooth. Don't over-mix.
Heat a nonstick pan or griddle. Brush with some butter and allow it to melt and cover the surface. Don't burn the butter or rush the process. Keep the heat on medium and pour 1/4 cup scoop of pancake batter in the pan. When it bubbles all over, flip the pancake and when it poofs a bit, let it cook about 1 minute more and remove from pan. place on a plate and repeat with batter until all pancakes are made and stacked.
Melt 2 extra dark chocolate bars and 2 TBSP of butter. Stir until smooth and so not overheat or it will burn.
Take a fork and grab a pancake with it. Dip the bottom side into the melted chocolate and place it upside down on a cooling rack in a cool room. Repeat until all pancakes are dipped on the bottom and cooling.
Once cool, stack pancakes chocolate side down and serve with maple syrup and chocolate crumbles/sprinkles/shavings (optional)
Serve with maple syrup. Fruit makes a great garnish, too!
