Chicken w/Dijon sauce

These are so delicious! What an affordable meal, too! It looks quite fancy but its actually a very thrifty meal! You can cut a whole chicken, or buy a family pack of thighs, wings, breasts, etc. Great for entertaining on a budget. #SoNomNom4u #chickenwithdijonsauce

Chicken w/ Dijon sauce

1 large pack of bone in chicken (or cut 1 whole chicken)

1 large onion, sliced thin

2 TBSP White Wine

1 cup Heavy Cream

1 TBSP Dijon Mustard

salt, to taste

4 TBSP light olive oil

pepper, to taste

Open chicken thighs, pat each piece dry with a paper towel and sprinkle both sides and under skin with salt and papper.

Heat an iron skillet with olive oil. Heat to medium high and place chicken in hot oil with skin down. Let the chicken cook until the skin becomes a nice shade of golden brown. Using tongs, flip chicken over and add the sliced onions. Lift chicken with tongs, allowing onions to get under each piece. cook another 15-20 minutes until chicken is crispy and onions are brown.

Remove chicken from pan. Keep onions in pan. Place chicken on a plate.

In pan, add white wine, cream, and dijon mustard. Cook until mixture thickens a bit. Stir Regularly to mix onions and meat juices from pan into mixture. Remove sauce and puree it in the blender. Pour sauce back in the pan. Once this thickens a bit, place chicken pieces back into pan. If chicken is not 160°F internally, place skillet into 350°F oven and bake approximately 10 minutes until internal temp of chicken reaches 160°F. Serve hot!
