Chicken Parmesan
4 Boneless, Skinless Chicken Breasts ( or as many as you need)
1 egg (depending on how many breasts you are coating)
1 cup of half & half or milk (depending on how many breasts you are coating)
2 cups flour
1 -2 cups of italian breadcrumbs (depending on how many breasts you are coating) (Make your own breadcrumbs! Recipe here!)
1 box of spaghetti noodles
1 cup Parmesan Cheese
2 cups Red Sauce (Make your own!)
In a medium bowl, beat egg and half & half. Set aside. Pour breadcrumbs into a plate.
Take chicken breasts and trim the fat. Butterfly them and cut each breast half into 2 pieces. Cover chicken with plastic wrap and pound each side of each breast piece with a meat tenderizing mallet.
Take one piece of chicken at a time and dip in this order:
1.Egg mixture
2. Flour
3. Egg Mixture
4. Breadcrumb
Set on chicken on a large plate and repeat until all chicken pieces are full coated with breadcrumbs.
When all chicken is coated, deep fry or bake the chicken pieces.
Deep Fry:
Place in preheated fryer with oil at 350°F and fry aproximately 7-10 minutes or until internal temp of chicken reaches 165°F. Time cooking depends on size of each piece of meat you are cooking. remove to cooling rack with papertowels palced below it.
Bake:
Place coated chicken pieces on a pan lined with parchment paper.
Bake in a 375°F oven for about 25 minutes or until all chicken pieces have an internal temp of 160°F. Time varies based on chicken size and QTY.
While chicken is cooking, boil a box of spaghetti noddles according to instructions on the package.
Assemble:
If they were deep fried: Line a cookie sheet with clean parchment paper.
Place each cooked breast on cookie sheet and spoon a generous amount of red sauce over each breast. Place a handful of grated mozzarella or provolone cheese on top of the sauce. On top of the mozzarella/provolone, grate freshly grated parmesan and place on top rack of the oven. You can use broil if you would like the cheese to brown a bit, otherwise, bake at 375°F for about 5 minutes to melt the cheese. Remove from oven and place on plate on top of cooked spaghetti noodles. Garnish with fresh parsley and freshly grated parmesan cheese.
If the breasts were baked and not deep fried:
Keep chicken on pan they baked on and spoon a generous amount of red sauce over each breast. Place a handful of grated mozzarella or provolone cheese on top of the sauce. On top of the mozzarella/provolone, grate freshly grated parmensan and place on top rack of the oven. YOu can use broil if you would like the cheese to brown a bit, otherwise, bake at 375°F for about 5 minutes to melt the cheese. Remove from oven and place on plate on top of cooked spaghetti noodles. Garnish with fresh parsley and freshly grated parmesan cheese.
