2 sticks of butter, softened at room temp
1-1/2 cup brown sugar
2 eggs
2 TBSP honey
2 tsp vanilla extract
2-1/2 cups old fashioned oats
1-1/2 cups flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 cup of your choice of optional fillers (Chocolate chips, dried fruit, nuts)
Line a baking sheet with parchment paper
Preheat oven to 350°F
Directions:
In a stand alone mixer, beat brown sugar, and butter until creamy and smooth. add each egg one at a time and beat until well blended. Add honey, vanilla extract and oats.
In a medium bowl combine flour, baking soda, salt, cinnamon, and any optional fillers you choose (if at all!) and mix until well combined.
Slowly add flour mixture, one cup at a time, into butter mixture while it is mixing. Mix until both dry and wet combinations are well blended.
Drop rounded balls (about 2 tsp each ) 2 inches apart on the parchment lined baking sheet. When sheet is full, bake cookies for 10-12 minutes. Remove from oven and let cool for 2-3 minutes on the pan. Using a spatula, carefully remove cookies one at a time from the baking sheet and place them on a cooling rack or brown paper bag, or parchment to cool.
