Cake Balls

Better than cake pops since there is no stick! These are like round petit fours, but much easier to make! You can make them in any colors you want! This is a recipe for all homemade cakeballs. To save time, just use a box cake and canned icing. These are so much better, though! @SoNomNom4u #Vegetarian #CakeBalls

2 cups all-purpose flour

1 ½ cups white sugar

½ cup butter, softened to room temperature

1 cup milk

3 ½ teaspoons baking powder

1 teaspoon salt

1 teaspoon vanilla extract

3 eggs

1 stick butter, softened at room temperature

1 (8 oz) block cream cheese

4 cups confectioners' sugar

1 tsp vanilla

1 bag white chocolate chips

Food dye for coloring

sprinkes or edible confetti

Preheat oven to 350°F

Line a 9"x13" cake pan with parchment. Spray the sides of the pan with nonstick oil spray.

In a stand alone mixer or bowl with beaters, add butter, sugar and eggs. cream until well blended.

In a medium bowl, mix flour, baking powder, and salt.

Add dry ingredients to wet ingredients while the mixer is on. Add 1 cup of mix and mix until completely blended.

Pour batter into the lined baking pan and bake for about 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove from oven and cool completely.

In a stand alone mixer or bowl with beaters, mix 1 stick of butter, 1 block of cream cheese, 4 cups of confectioners' sugar and 1 tsp vanilla until thick and creamy. Set Aside.

Melt 1 bag of white chocolate chips in a double boiler or in a glass pyrex measuring cup hanging inside a medium pot with water. Do not get water in the chocolate or it won't work right.

When cake cools completely, remove it from the pan and place it in a standalone mixer and let the paddle attachment break it up compeltely. If you do not have a stand alone mixer, use a bowl with beaters or your hands.

Once cake is all broken, add the cream cheese frosting you made and keep the beaters on to mix it until it looks like dough.

Now, line a large tray with parchment and make 1" balls and place them on the parchment lined pan. Once all the balls are made, place the pan in the freezer for about 20 minutes. Remove them from the freezer and heat your chocolate.

Take a ball and place it on a toothpick or skewer and dip it in the chocolate. Place it back on the parchment lined tray to cool. Remove the toothpick and fill the hole with chocolate using the toothpick tip. Repeat. Once all balls are cooled and chocolate hardens, you can drizzle them with another color chocolate and sprinkle them with edible confetti or sprinkles. Repeat until all the balls are made.

When they harden, place them in a decorate candy paper and place on tray or in a tin to serve or gift.
