Banana Bread

Who doesn't love this delicious classic? We make ours with a special crumbly top that takes us straight to NOMNOM Town! Take a picture of it--because that is all that will be left when you slice into this Nom Nom Sensation!


WARNING: After making this, your house will smell delicious!


We eat bananas often, but don't like them when they are no longer greenish yellow. When our bananas turn, I peel them, food processor them until they are mushy, and pour them into a zipper bag and place it in the freezer. Any time I want to make banana bread, I pull a bag of banana puree out and it simplifies the process so much! #SoNomNom4u #bananabread #vegetarian




BATTER:

2 cups of flour

1-1/2 tsp. Baking Powder

1/2 tsp baking soda

1/2 tsp salt

4 TBSP Cinnamon (This is not a typo!! People never write the amount large enough. I do. Trust me, its much better.)

1 TBSP nutmeg

1 tsp allspice

2 eggs

1 tsp vanilla

6 bananas, ripe and smashed into a puree

1 cup dark brown sugar

1/2 cup butter, melted


Preheat oven to 350°F

Set rack in the middle.


STREUSEL TOPPING (Below)

4 TBSP Butter, cut into pieces

1/4 cup rolled oats

1/3 cup brown sugar

1/4 cup flour

1 tsp Cinnamon


TO MAKE STEUSEL TOPPING:

In a small bowl, add butter that was cut into pieces, oats, sugar, flour and cinnamon. Using a fork, potato masher, butter cutter or whisk, break the butter up into the other ingredients until you have a dough consistency. Set aside.


TO MAKE BANANA BREAD:

In a medium bowl, add flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. Mix until blended. Set aside.


In a stand alone mixer or in a bowl with a hand mixer, add brown sugar, vanilla, and eggs. After it is well blended, add melted butter and banana puree and mix completely. Slowly add flour mixture one cup at a time until it is all mixed and well blended.


Grease a bread pan with butter (I love the glass ones for banana bread!) or spray it with nonstick oil spray. Pour batter into greased pan and fill it about 3/4 full. Sprinkle streusel topping all over the top.


NOTE: There will be extra batter! MAKE a smaller loaf, or fill two of the same size pans only half way. Batter freezes well, too--you can pour it into a marked zipper bag and freeze until you are ready to bake it! Make sure and save some struesel topping for the other loaf!


Place pan full of banana bread batter into the preheated oven. Make sure oven rack is in the middle position. Bake for approximately 50 minutes, check it often after 40 minutes. Banana bread will be ready to remove from oven when you insert a toothpick in the highest point and it comes out clean.


NOTE: Ovens vary, pan materials vary and amount of batter in pans vary. Cooking time will vary due to these variances.
