Bacon Pesto Roulades

NomNom is all I can say about these Bacon Pesto Roulades! Make it even more fun with a touch of mozzarella cheese. It's not necessary, though--these don't need anything else to make them delicious! #SoNomNom4u #BaconPestoRoulades



1 Flank Steak makes about 8 small roulades or 1 large roll sliced into pinwheels


1 large flank steak

1/2 cup of prepared pesto sauce

12 slices of cooked bacon

Kitchen Twine

4 TBSP oil


Preheat oven to 350°F


Take a large flank steak out of the package and place it on a large, clean surface. Cover it with parchent or plastic wrap and beat it with a flate kitchen mallet. Beat it until it is only about 1/8" thick.


Cut the flank steak down the middle lengthwise (against the grain.

Now, based on the size of your flank steak, cut it across 2-3 times so you have equal portions that are no shorter than 4" long. (See image below)


Take 2 TBSP pesto and smear it along the surface of the meat. Place 1-1/2 - 2 pieces of bacon broken in half across the top of the pesto.


Roll meat up. and tie with kitchen twine to secure. Place in baking dish and repeat with all other pieces until all roulades are placed into the baking dish.


Now, heat a skillet with 4 TBSP oil.

Place each roulade in the extremely hot oil and brown for about 30 seconds on all sides. Place browned roulades back in the baking dish.


Bake roulades until the internal temperature reaches 145. Remove from oven and let stand for 5-10 minutes.

serve with italian fried potatoes and asparagus.
