Who loves the Soup, Salad, and Breadsticks at Olive Garden? I always did in the past! Now when I get a craving for Zuppa Toscana, I make it myself! There are so many fantastic and fresh ingredients in this soup! Surprise your family with it tonight! Zuppa Toscana
3 TBSP Olive oil
1-12-oz tube of pork sausage (I use spicy)
1/2 cup real bacon pieces (we buy the bagged kind and keep it on hand for this soup.)
1 medium onion, chopped
5 cloves of garlic, chopped
2 TBSP Red Pepper Flakes
10 cups water
12 tsp chicken bouillon (12 cubes or 12 tsp powder)
1-1/2 cups heavy cream
6-8 medium sliced russet potatoes
2 cups fresh kale, chopped
In a large soup pot, add olive oil and saute sausage and bacon until fully cooked. Remove from pan with slotten spoon and leave grease in the pan. Set aside sausage. In the grease-filled pan, add onions, garlic, and red pepper flakes and cook until the onions are translucent.
When onions are translucent, add 10 cups of water and bouillon. Turn up heat to bring to a boil.
While water is heating, wash your potatoes, leave the peel on and slice them all (I use a mandolin) into 1/2" slices.
When the water is boiling, add potatoes. Let potatoes boil for approximately 20 minutes, until they are soft. When potatoes are soft, turn to low, add cream, sausage/bacon and chopped kale and stir. Serve hot with a side of breadsticks and salad.
Instant Pot Directions:
Use saute setting, Add Olive oil. Saute sausage and bacon until fully cooked. Remove from pot with slotten spoon and leave grease in the pan. Set cooked aside sausage. In the grease-filled pan, add onions, garlic, and red pepper flakes and saute until the onions are translucent.
When onions are translucent, add 10 cups of water and bouillon. Add potatoes. Put lid on and make sure valve is in the middle. Set Instant Pot to Manual 20 minutes. After time is up, release pressure and add cream, sausage/bacon and chopped kale. Stir and serve hot with a side of breadsticks and salad.
