I used to make Tortellini Rice Soup when my son was little. It never lasted long! This is a nice light soup, but leaves you feeling satisfied and well-fed! This soup works great if you put everything in the Instant Pot at once! #tortelliniandchickensoup #sonomnom4u
4 Quarts Chicken Broth
1 bag of frozen tortellini (Cheese Spinach is my choice) (You can use dry tortellini if you boil it longer or pre-cook it)
1 lb. fresh spinach, chopped
1 lb boneless, skinless chicken breasts, chopped into small pieces
1/2 lb mushrooms, sliced
2 green onions, chopped
1 medium red bell pepper, diced or julienned
1 cup cooked jasmine or basmati rice (or 1/2 cup uncooked Minute Rice)
2 tsp tarragon
Freshly grated parmesan (garnish)
In a large pot, bring broth to a boil. Add tortellini and cook for about 5-7 minutes. Add spinach, chicken, mushrooms, peppers, green onions, cooked rice (or raw Minute Rice) , and tarragon. Boil for 5 minutes. Remove from heat and ladel into bowls. Sprinkle with fresh parmesan
Instant Pot:
Put everything into the pot. Close lid and set Manual to 20 minutes. Make sure the pressure valve is set in the center position. Let the pot release pressure on its own. Serve hot and ladel into bowls. Sprinkle with fresh parmesan.
