Peanut Butter Chocolate Chip Cookie Bars
1-1/2 cups brown sugar, packed
3/4 cup Peanut Butter
1 stick of butter, softened to room temperature
1 egg
3 TBSP Cream, half and half, or milk
1 tsp vanilla extract
1-3/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
To make:
In a large stand alone mixer or bowl, combine brown sugar, peanut butter, and butter and mix until completely blended and creamy. Add egg, vanilla, and cream. Blend another 30 seconds until well mixed.
In a separate bowl, combine flour, baking soda and salt. With mixer turned on, slowly add 1 cup at a time of flour mixture until all flour mixture is incorporated into butter mixture.
Turn off mixer and line a large pizza pan or 9"x13" dish with parment. Spray parchment with baking oil spray.
Dump all the dough on the pan or in the sprayed, lined dish and spread evnly. If using a pizza pan, leave about an inch all around. The dough will expand as it bakes.
Bake in 375°F oven and bake for 20 minutes. For softer cookies, bake 15 for crunchier cookies bake 25 minutes.
Ovens vary so times may differ as well. Keep a close eye on them so they come out exactly like you love!
When baked, remove the dish from the oven and let cool on counter for at least 30 minutes before cutting into bars.
