Cookie Cake

Yum!! This cookie cake is the best I ever had! Ok, so it isn't a cake--its a big, delicous cookie! Bake less for a softer cookie, and more for a crunchier cookie! You can decorate this or cool, cut and eat! Tastes delicious either way! #Cookiecake #SoNomNom4u #WhyBuyCookieCakeWhenTheyAreSoEasyToBake




Ingredients:

2-1/2 cup all purpose flour

1 tsp. Baking Soda

1 tsp. salt

2 sticks (1/2 cup) butter (room temp or melted)

2 eggs

1 tsp vanilla

1-1/2 cup dark brown sugar

1/2 cup chocolate chip of your choice. ( we love Ghiradelli and Trader Joes chips!)


PREHEAT OVEN to 375°F

Directions:

In a stand alone mixer bowl or large bowl, add butter and brown sugar. Beat until creamed together. Add Vanilla and eggs, beat until everything is well blended and smooth. Set aside.


In a separate bowl, mix flour, baking soda and salt. Add Flour mixture slowly while the mixer is on. (We use the flour guard to avoid a huge mess!) when all flour is added, turn off mixer and pour in chips. Mix by hand.


Line a large, round pizza pan with parchment paper.


Pour cookie dough out onto the parchment lined pizza pan. Form the dough into a circle using your clean hands. Press the dough to shape it into a perfect, flat circle, almost the circumference of the pizza pan. Make sure the thickness is consistent all around the cookie. You don't want a crunchy side and a soft side!


Bake at 375°F for 12-15 minutes. Ovens vary and so do cookie preferences. The less baking time, the softer the cookie. I cook mine around 12 minutes. SOFT! The longer you bake them, the crisper the cookie. The result is up to you!


Immediately remove the cookie cake from the pan .

To do this, slide the parchment and the cookie off the pizza pan.

Make sure the cookie stays on the parchment!

Let it cool on the parchment on a large surface.

Cut into squares.

Serve! Enjoy warm and gooey or completely cooled!
