Cheez-Nom Crackers

Do you love the store bought Cheez-Nom crackers, but hate the ingredients? Make your own! The end result is delicious but it does also depend on the cheese of your choice. We use Cabot Seriously Sharp White Cheddar. They are delicious with orange cheddar, too! You'll probably want to double this recipe! Cheez-Nom Crackers


8 oz Cheddar Cheese (I use white) (The sharper the better!)

1/2 stick of softened butter

2 tsp salt (I use Himalayan)

1 cup all purpose flour

2 TBSP cold water


Line a cookie sheet with parchment paper. Set aside.

Preheat oven to 375°


In a stand alone mixer with paddle attachment, mix cheddar, butter and salt until well blended. Add flour. Mixture will be crubmly, mix until it looks like its breaking. Add ice water and mix more. Remove dough, create a big ball and wrap inplastic wrap. Leave it in fridge for an hour or more.


Break dough in half and set the other half in fridge while working on this half. Keep dough as cold as possible.


Roll dough with a rolling pin to about 1/2" thick (if putting into a pasta roller). Place rolled dough into a pasta roller or keep using rolling pin. If using pasta roller, use the #5 setting for thickness. If using a rolling pin, roll to 1/16" inch thick.


When dough is rolled out, use a pizza cutter and cut as even vertical strips as you can (about 1/2") Now, cut horizontally about 1/2" strips until you have a ton of little squares.

Using a skewer, place a hole in each square.


Place cookie sheet in the oven and bake about 15 minutes. Check them regularly! Ovens vary and these are very delicate. You want them crispy and not burnt.


While those are baking, remove other half of dough fromt he fridge and repeat process.
