Candied Cranberries

Updated: Sep 26, 2020

My mom makes these every year and I wanted to have them more often since they are so delicious! Although she told me how to make them and I cannot take credit for this recipe, I did add unique touches to make the process mine. :-) #SoNomNom4u #candiedcranberries #vegetarian

Candied Cranberries

1 cup sugar + 1 cup sugar

1 cup water

1 tsp vanilla

1 tsp lime or orange extract

1 bag of fresh cranberries

To make:

Pour cranberries into a large collander and rinse them completely.

Place 1 cup of sugar in a large zipper bag. Set aside.

In a large pot, bring 1 cup of water and one cup of sugar to a boil, stir until sugar is all dissolved and you have a simple syrup. Turn off heat. Stir in vanilla and lime/orange extracts.

Pour clean cranberries into the simple syrup. Using a slotted spoon, scoop out a spoonful at a time of the cranberries. Gently tap the spoon on the side of the pot to stop them from dripping. When no longer dripping, spoon the cranberries into the sugared zipper bag. Repeat until all cranberries are in the bag. Zip the bag and shake vigorously.

Pour sugared cranberries out of the bag and into a collander and shake off excess sugar. Pour shaken cranberries onto a large piece of parchment and let dry for a couple hours. When coating is hardened and crunchy, pour into a ziplock or lidded container to store.
