Blackberry Flat Muffin
Easier than muffins, but still so delicious! Cut it like a pie and give everyone a slice!
1 stick of unsalted butter
1 cup sugar (+ additional 1/4 cup sugar to reserve)
1 cup self rising flour
1 cup half & half
2 cups blackberries or your fave fruit
Pam or other nonstick spray
Preheat oven to 350°
Melt butter in the microwave. in a stand alone mixer or by hand with large spoon or wisk, mix 1 cup sugar, 1 cup flour, half & half, and melted butter.
Pour batter into a 9" round baking pan that was sprayed with nonstick spray.
Generously pour all the fruit over the top, gently pushing into batter a bit with fingertips. Sprinkle entire top with the reserved 1/4 cup sugar.
Bake in 350°F oven for 1 hour. Remove from oven and serve alone or with whipped cream or vanilla ice cream.
