Peanut Butter Cookies
1-1/2 cups brown sugar, packed
3/4 cup Peanut Butter
1 stick of butter, softened to room temperature
1 egg
3 TBSP Cream, half and half, or milk
1 tsp vanilla extract
1-3/4 cup flour
3/4 tsp baking soda
1/2 tsp salt
1/2 cup granulated sugar
To make:
In a large stand alone mixer or bowl, combine brown sugar, peanut butter, and butter and mix until completely blended and creamy. Add egg, vanilla, and cream. Blend another 30 seconds until well mixed.
In a separate bowl, combine flour, baking soda and salt. With mixer turned on, slowly add 1 cup at a time of flour mixture until all flour mixture is incorporated into butter mixture.
Turn off mixer and line a large cookie sheet with parchment.
Using a mini scoop or spoon, make 1" balls, dip each ball into granulated sugar, and place them about 3 inches apart on the cookie sheet.
When cookie sheet is full, take a fork and smash each cookie vertically then horizontally with a fork.
When all cookies are made, Place cookie sheet in 375°F oven and bake for 7-10 minutes. For softer cookies, bake 7 for crunchier cookies bake 10.
Ovens vary so times may differ as well. Keep a close eye on them so they come out exactly like you love!
When baked, use a spatula to remove them from the cookie sheet. Place on cooling rack or parchment of a large work area. Let cool.
