Apple Cinnamon Oatmeal Cookies

2-1/2 sticks of butter, melted

1 cup brown sugar

1/2 cup Bakers or granulated sugar

1 egg

2 tsp vanilla

1-1/2 cups flour

1 tsp baking soda

1 TBSP cinnamon

1 tsp salt

3 cups Old Fashioned Oats

2 Granny Smith apples--peeled, cored and finely chopped.


Heat oven to 375° F


In a stand alone mixer with a paddle attachment or a regular mixer with beaters, beat the brown sugar andbutter. When well mixed, add the egg and continue beating it for a few seconds.


In a medium bowl, add flour, baking soda, salt, and cinnamon. Mix until well blended and slowly stir the dry mixture into the wet mixture while it is beating. Add the oats and finely chopped apples and mix until everything is completely blended.


Line 2 large baking sheets with foil or parchment.

Spray with nonstick spray.

Spoon 2 TBSP- 3TBSP of dough at a time into heaps about 3 inches apart on all sides.


Bake 8-12 minutes. (add 2 minutes for larger cookies. ) 8 minutes for super soft cookies and 10-12 minutes for crunchier cookies.


Remove from oven, cool one minute on the baking sheet and using a spatula, gently transfer each cookie to a cut open paper bag on the counter or a cooling rack. Cookies will form better as they cool.
