Ingredients:
3 cups flour
2 tsp salt
1 tsp baking powder
1/2 cup olive oil (light or extra virgin works fine!)
1 cup water (WARM is best!)
1 tsp. lime juice
In a stand alone mixer with the bread hook (or by hand) add flour, salt, and baking powder. Mix until it is all blended. Add 1/2 cup of water, lime juice and half the olive oil. mix until it is beginning to form a dough. slowly add the rest of the ater and the rest of the olive oil. mix for about 1 minute until the dough looks smooth and there is no more dry pieces on the side (if using a stand alone mixer, use a rubber spatula to scrape the sides while blending.)
When it is all blended, break into 12 equal parts. The dough will be a bit sticky so make each part into a ball and dip the dough ball into flour and set on a plate. Repeat until all dough balls are made and diped in flour and on the plate. Cover and set aside for about 30 minutes.
After 30 minutes, roll each ball into a flat round about 6 inches in diameter. (You can use a tortilla press, or a rolling pin) Repeat with each ball until you have 12 flat rounds of tortillas. I keep them divided in a stack with parchment between. I find a get a better circle it I start with my hands from the outside edge working all around pressing it flat, while holding it up int he air. Then, I lie it flat and roll out the rest of the way.
Heat a non-stick skillet or griddle to medium high. Make sure it is completely hot and then add 1 tortilla. When it bubbles and puffles, wait a few seconds and flip it using tongs. When it bubbles and puffs, remove it and place it on a plate with parchment on top. Repeat with each one, stacking and placing a new parchment piece in between each tortilla.
NOTE: If you are not getting brown dots, turn up your heat until they cook quickly , puff and get brown dots.
