Beef Jerky

Beef Jerky makes a great gift for guys (and gals!) Who doesn't love a big jar filled with fresh beef jerky? Also great for the people who live for camping! This is a great road trip snack, too! You can get the butcher to slice the raw toast super thin for you when you buy it. #beefjerky #sonomnom4u



5 lb eye of round roast

1 (10 oz) bottle Worcestershire Sauce

1 (4 oz) bottle Liquid Smoke

1 (15 oz) bottle soy sauce

2 TBSP Cayenne (optional or add mess or more for taste)

2 TBSP Garlic Powder

2 TBSP Onion Powder

2 TBSP Fresh cracked black pepper


Get a large bowl and add worcestershire, liquid smoke, soy sauce, cayenne, garlic powder, onion powder, and black pepper. Stir until well blended. Add Thin sliced roast and separate it all out so no slices are stuck to each other. toss to coat all pieces in the liquid mixture. make sure everything is covered completely in the liquid and place foil or a lid on bowl and refrigerate 24-48 hours. Choose dehydrator or oven method below.


Remove from refrigerator.


Dehydrator method:

Using tongs or your clean hands, shake each slice off and place meat onto a dehydrator tray, one at a time making sure you do not overlap the pieces at all. Times vary depending on dehydrator style. Jerky will be done when it turns dark and loses about half of its original weight. Remove from dehaydrator, and cool completely on parchment paper on the counter. When completely cooled, place in airtight containers.


Oven Method:

Preheat oven to 150°F

Using tongs or your clean hands, shake each slice off and place meat onto a large baking sheet lined with foil, one at a time making sure you do not overlap the pieces at all. If they don't all fit on one sheet, use more baking sheets. Place baking sheets in oven and bake for about 10-12 hours. Times vary depending on oven. Jerky will be done when it turns dark and loses about half of its original weight. Remove from oven, and cool completely on parchment paper on the counter. When completely cooled, place in airtight containers.


STORING:

Jerky will keep at room temp in an airtight container for approximately 2 weeks. Jerky will keep for about 3 months if stored in the refrigerator and 6 months if stored in the freezer. If frozen, jerky won't go bad but as with anything in the freezer, it is best to consume within 6 months for freshest taste.
